Cold weather is upon us and for me, that means making comfort foods like chili! One of my favorites is White Chicken Chili. My friend, Krystle, gave me the recipe during my time living in Colorado Springs, Colorado. It was a lifesaver on those cold, winter days in the Rockies. I liked to look out of my kitchen window and see the snow on the tops of the mountains while I was cooking! I always made mine in my crockpot. But you can use a large pot if you don’t have a crockpot.
White Chicken Chili
INGREDIENTS
- 2 packets of White Chicken Chili seasoning mix
- 2 cups of water
- 2 – 15 to 16 oz cans of Cannellini Beans undrained (or other white beans of your choice)
- 2 – 15 to 16 oz cans of Great Northern Beans undrained (or other white beans of your choice)
- 2 – 14.5 oz cans of Chicken broth
- 1 lb. of finely chopped cooked chicken breast (I used pre-cooked frozen chicken, but you can always buy fresh chicken and cook it.
- 1 – small can of Diced Green Chiles
OPTIONAL INGREDIENTS
- Shredded cheese
- Sour cream
- 1 – jar of jalapenos
- Tortilla chips
- Chopped onions
- 2 cans of whole kernel sweet corn
DIRECTIONS
And that’s it! It’s a quick and easy dinner during the week when you don’t have a lot of time to cook. I hope you enjoy it! Let me know what you think!

A quick & delicious crockpot meal on a cold day.
Ingredients

Instructions
- Stir in beans, chicken, chiles, chicken broth, chili mix and water to a crockpot or large pot. If you cook it in the crockpot, cook it 4-6 hours. If you cook it in a large pot, bring the ingredients to a boil. Cover. Reduce heat and simmer until hot, stirring occasionally. Serve with toppings, if desired.
