Mexican Black Bean Chili
Mexican Black Bean Chili is a very simple dinner idea that does not take long to prepare. While the chili is simmering you have time to help the kids with their homework. This recipe features ground beef, black beans, carrots and corn. It is also extremely customizable.
Ingredients
1lb ground beef
1 packet chili seasoning mix
2 cups water
1 can black beans, drained
1 cup salsa of your choice
2 carrots, diced
1/2 cup frozen corn
Optional
I like to add additional seasonings.
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
Salt & Pepper
Shredded Cheddar Cheese, Optional
Instructions
Brown the ground beef in a stock pot or dutch oven over medium heat.
Stir in the chili seasoning packet and water.
Add the remaining ingredients. Mix well.
Bring chili to a boil, allow to boil for about 3 minutes. Stirring continuously.
Reduce to simmer and cook for about an hour.
Spoon into bowl and top with cheddar cheese!
