Spinach and Tomato Stuffed Chicken Breast
Serves 4
Ingredients
2 boneless skinless chicken breasts
2 cups fresh spinach, chopped
1 tomato, diced
1 garlic clove, minced
1/2 cup bread crumbs
1/2 cup chopped parsley
1 packet ranch dressing (dry seasoning)
1/2 cup greek yogurt
salt & pepper
Olive oil
Instructions
Preheat the oven to 400
Cut a slit into the side of each chicken breast (almost like butterflying, but not as much)
In a medium sized bowl, add the spinach, tomato, garlic, bread crumbs, parsley and a pinch of salt &
pepper. Mix well.
Stuff mixture into the chicken breasts.
Brush the chicken breasts with the yogurt, sprinkle the ranch packet all over.
Place in an 8×8 pan and bake for 30 minutes or until chicken juices run clear and inner temperature has
reached 160.
