Oatmeal Chocolate Chunk Cookie Recipe

Makes 1 dozen

An easy one bowl method that makes a small batch. Perfect for when you have a craving, but don’t want to spend hours in the kitchen baking multiple batches!

Ingredients

  • 1 stick butter, softened
  • 2 teaspoons vanilla
  • 1 large egg
  • 1/2 cup brown sugar, packed
  • 1 cup flour (we used whole wheat)
  • 3/4 cup rolled oats
  • 2 tablespoons baking powder
  • 8 oz chocolate chunks

Oatmeal Chocolate Chunk Cookie Recipe

Instructions

Preheat the oven to 350

In a large bowl, cream butter, egg, vanilla and sugar until smooth. 

Add the flour, oats and baking powder evenly sprinkled around the top of the butter mixture. 

Mix well.  Fold in chocolate chunks.  

Spoon onto sheet pan. Cookies do not spread so you should be able to get all 12 on one pan. 

  • Tip: A silicon baking sheet is very versatile and will ensure your cookies never stick to the cookie pan. This makes baking and clean up a breeze. I use Silpat brand sheets. My granny used them and I am still using ones she bought over 15 years ago!

Bake for 10-12 mins or until golden.
