Easy Danish Pastry Dough Recipe

This is a delicious, flaky, buttery pastry dough recipe that is quite simple to make, though it is time consuming, it’s well worth it!  This recipe is easier to make than your typical pastry dough recipe but yields the same results.  An easy to use, versatile, delicate dough.

Ingredients

1 1/2 cups all purpose flour
2 tablespoons white sugar
2 teaspoons active dry yeast
1/2 teaspoon kosher salt
1 3/4 cups unsalted butter, cold
1 large egg
1/4 cup cold milk
2 tablespoons water

Directions

Combine the sugar, flour, yeast, and salt in a food processor and pulse twice. 
Add the cold butter in small chunks into the food processor and pulse until the butter forms into small pieces the size of peas.  Transfer the mixture to a medium bowl and set aside.

In a small bowl whisk together the milk, egg and water. 

Add the water mixture to the flour mixture and fold together with a rubber spatula.  Place the dough onto a piece of plastic wrap and mold into a rectangle.  Place in the fridge for at least 3 hours.

On  lightly floured surface roll out the dough out 8×15″ rectangle.  Fold the dough over into thirds like a letter going into an envelope.  Roll back out into a rectangle the same size as before.  Repeat this step once more for a total of 3 times.  Dust with flour as you go along. 
Note that when you first roll it out it will look shaggy and broken, don’t worry!  Through repeating this process it will look more uniform and smooth.  You will be able to see chunks of butter in your dough, this is a good thing.
Wrap the dough in plastic wrap and place back in the fridge for at least 1 hour longer.

Remove the dough from the fridge and repeat the previous step three more times.  Re wrap the dough and place back in the fridge for an additional three hours or overnight.
