Color Crazy Chocolate Cake Mix Cookies

My kid loves to bake. Most of the time we make cookies from scratch but every once and awhile I pull out a box of chocolate cake mix and make these color crazy chocolate cake mix cookies. Easy, delicious and they look great.  

Color Crazy Chocolate Cake Mix Cookies

Ingredients:

1 box of chocolate cake mix (do not prepare according to the box)

1 cup flour

2 eggs

2 tablespoons oil

1/2 cup water

Handful white chocolate chips

Candy melts in the color of your choice

Instructions:

Preheat the oven to 350

Grease a cookie sheet with a touch of oil or butter

Add the cake mix to a large bowl with the water and oil.  Mix well.  

Beat 2 eggs into a separate bowl or cup.  Add to the cake mix.  Beat (by hand or electric mixer) until smooth and fully combined. 

Hand fold in the flour.  The dough will still be sticky, but not thin and should not be pourable.  
Drop spoonfuls of cookie dough onto the sheet pan.  Top with white chocolate chips. 

Bake for 10 minutes or until set up.  

Add the candy melts to a microwave safe dish and melt, one container at a time, in the microwave for 1 minute.  Stir with a spoon and heat again for 30 seconds at a time until smooth. 

Use the spoon to drizzle each color, one at a time, over each cookie.  The kids love this part! 

Use themed color like blue and yellow for a “Minion” party or red white and blue for “July 4th”.  These cookies are made with green, pink and blue and would be really great at a birthday party or for Easter!   Even to just celebrate Spring!
