Baked Chicken & Grain Pasta Medley

Our family members all have a variety of meal preferences and I am always looking for a way to please them all, while ensuring the meal is healthy. I have been able to switch my picky eaters from plain white rice to wild rice and then more recently have been able to add in couscous and split peas. Add some baked chicken and either salad or steamed veggies to round out a healthy meal your whole family will love.

Baked Chicken & Grain Pasta Medley

Ingredients:

1 cup wild rice, couscous and split pea mixture

2 cups chicken or vegetable stock

1/2 cup onions, chopped

1/2 cup carrots, sliced

2 cloves of garlic, minced

salt to taste

pepper to taste

2 – 3 1/3 Tbsp extra virgin olive oil

Baked Chicken & Grain Pasta Medley

Directions:

Cook wild rice, couscous and split green pea mixture in an Instant Pot for four (4) minutes. Instant Pot should be on the Pressure setting.

Add two (2) cups of broth and a 1/2 Tbsp of EVOO.

Secure Instant Pot lid and cook using the Pressure setting for four (4) minutes.

After the timer goes off release steam vapor, unlock and open pot and Fluff rice mixture with a fork.

For chicken, rinse and pat dry, brush with olive oil and seasoning with salt and pepper. Bake chicken in a preheated 350-degree oven for 60 minutes (1 hour), juices should run clear, and skin should be crisp.

Serve with wild rice mixture.
