Caramel Apple Cupcakes Recipe
Cupcake Recipe
1 box french vanilla cake
3 eggs
1/2 cup vegetable oil
1 cup water or milk
Mix the cake batter according to makers instructions. Line your baking tins with cupcake liners and bake for 20 minutes or until golden brown and a tooth pick comes out clean. Remove from the oven and cool on a wire rack. Once cooled use a cupcake corer and remove the centers of the cupcakes to prepare them for their caramel filling!

Caramel Filling
30 kraft caramels
1/2 tablespoon water or cream
Place a non-stick saucepan on the stove on low-medium heat. Remove the wrappers from your Kraft caramels and place into the saucepan along with the water; stirring constantly. Remove from heat once they completely melt. Allow to cool for a few minutes before placing into a piping bag (you don’t want to burn yourself!), once cooled fill your piping bag and fill each cupcake with the creamy smooth caramel filling. Reserve any un-used caramel to drizzle on the top!
Icing
3/4 cup butter
1/2 teaspoon vanilla
3 cups icing sugar
3 viles of Apple Flavoring (found at the Bulk Barn and most health food stores)
green food coloring
Cream the butter and vanilla together in a large bowl. On low speed slowly add the icing sugar until it’s all combined then add your apple flavoring and a few drops of green food coloring. Place your desired piping tip in your bag and fill with your apple flavored icing. Pipe the icing onto your cupcakes. Once finished use the rest of your caramel to drizzle around the top. If you run out just make a half batch of the caramel recipe.
For an extra added touch you can use melted chocolate melties to create an apple stem, and melted white chocolate melties colored with green food coloring to create some cute leaves!
