One of my favourite things about the holidays is to try new-to-me food. I live in Southern Ontario, Canada where Sweet Potatoe pie is not a staple at our holiday dinners. I decided to give it a go and I cannot believe how easy it was.
Easy Sweet Potato Pie Recipe
2 cups mashed sweet potato
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla
1 cup cream (or half & half)
1 teaspoon cinnamon
1 deep dish pie crust
Preheat the oven to 425
In a large bowl, using an electric mixer whip the sweet potato until smooth.
Add the remaining ingredients and beat until fully combined.
Pour into a 9-inch pie shell. Bake for 15 minutes.
Reduce temperature to 350 and continue baking for 45 minutes or until a toothpick inserted in the middle comes out clean.
Best served cold.
