Classic Nut Free Banana Muffins Recipe

This classic nut free banana muffin recipe is a childhood favorite of mine. I can remember being a little girl helping my Mom bake whilst watching episodes of Doogie Howser M.D. 

What I loved most about these banana muffins was their lack of nuts, and the simplicity of them. There are few ingredients needed and you get a perfect muffin every time. These muffins are perfect for an on the go breakfast, or packed in a school lunch. A sweet treat without all the sugar. Feel free to add 1/2 cup chocolate chips to them, but we love them as is, and I think  you will too.

Whip up a batch of these classic banana muffins and see just how simple and delicious they are.

Classic Nut Free Banana Muffins Recipe

What you will need:

  • 1/4 cup butter or margarine; softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cup all purpose flour
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 3 large or 4 small ripe bananas

Preheat oven to 350 degrees F and line your muffin tins with liners (approx 18)

Cream together butter (or margarine) and sugar. Beat in the eggs, one at a time until all combined.

Mash the bananas and add them to the creamed mixture.

Combine flour, baking soda and cinnamon together and then combine into the banana mixture.

Fill each muffin tin 3/4 full of batter, and bake in the oven for 30 minutes, or until the tops spring back with touch.

Remove and let cool or wire rack. Store in air tight container.
