There is nothing like biting into a delicious cookie that brings back all the memories of being a child during the holidays. This delicious molasses crinkle cookie is guaranteed to do just that! These crispy cookies pair perfectly with a cold cup of milk or a nice warm cup of hot cocoa to dip them in. Make lots! They will be gone quickly!
Molasses Crinkle Cookie Recipe
Ingredients
1 cup white sugar
2/3 cup vegetable oil
1 egg
1/4 cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 cup white sugar – for rolling cookies in
Directions
Pre-heat oven to 350
In a large bowl or stand mixer mix the sugar and the oil together for one minute on medium speed. Add the egg and mix thoroughly through. Next add the molasses and vanilla and mix through.
Add in the dry ingredients and stir until the dough comes together.
Roll the dough into small 1 1/4″ thick balls. Place the sugar in a bowl and roll each cookie into the sugar coating it. Place 12 onto a cookie sheet and bake for 12 minutes.
Allow to cool on the pan for a few minutes before transferring to a wire cookie rack.
For a super delicious treat add a small scoop of ice cream between two cookies!
